Tee & I are trying to include more greens in our diets nowadays. While buying a juicer helped a lot, i still want to include more veggies in my lunch meals. Sticking to eating greens, i made this broccoli stir fry with quinoa today for lunch, its a quick & easy meal idea and a healthy one too.
Many might not like the flavor of quinoa. Who am i kidding, it has no flavor, its quite bland especially for an Indians taste palate like mine. The same goes for Broccoli, Tee dislikes it. But i like broccoli when they are roasted or stir-fried, and thats how i came to try this recipe. I used onions with a bit of garlic and chilli powder to bring in the flavor.
Quinoa + Broccoli Sitr-fry
(prep time - 5 mins, cook time - 15 mins, serves 1)
Ingredients
Broccoli florets - about 15
Quinoa - 3/4 cup
Sliced Onions - 1 cup
Minced garlic cloves - 1 tablespoon
Extra Virgin Olive oil - 3 tablespoons
Red chilli powder - 1 teaspoon
Salt - to taste
Water - 1 1/2 cups
Steps:
Cook quinoa with some salt and water. Learn how here.
In a medium hot fry pan(with a lid), add cooking oil. Once its hot, add the minced garlic and sauté for a min. Once they start to turn light brown, add the sliced onions and sauté until the onions are almost cooked. Now add red chilli powder and sauté for another minute.
Once the onions are cooked, add the broccoli florets and salt to the pan and mix. Close the lid and cook for 3 minutes, while stirring in between.
Now mix the quinoa and broccoli sauté, and you are done!
I finished this plate in no time, just make sure to take every bite with a bit of onions and broccoli. Hope you try this at home, let me know how it goes.Thanks for reading!
