CURRY IN A HURRY - THAI RED CURRY

Lately i am trying my hand at cooking asian food, like this simple stir fried noodles that i am making often, and also various thai curries. I am no expert to make everything from scratch, so i take the help of store bought items now and then especially when trying a new cuisine. Its all trial and error, but once it clicks, i just stick to them. One such grocery store find for thai curries is Trader Joe's Thai Red Curry sauce. Their yellow curry sauce is equally good too. It has the perfect flavor, and the curry is ready in minutes, hence the title of the post!

Thai Red Curry (Serves 3-4)
Ingredients
Trader Joe's Thai Red Curry sauce 11oz - 1
Choice of Vegetables - Carrots, Baby Corn, Green bell pepper
Choice of Protein - Tofu
Veggies prepped and ready
Pressing tofu with some heavy items to remove excess water
Tofu cut into cubes
On a medium hot frying pan, add 3 tablespoons of cooking oil, once hot add the veggies. First add the veggies which take longer to cook, here i added carrots. After 4 minutes of frying, add the baby corns and bell peppers. Cook for additional 4 minutes. Next add tofu. Cook for 5 more minutes. Add the red curry sauce, mix well with veggies. I added the whole 11 oz of sauce for my recipe here. You can add about 1/4 cup of water/coconut milk to reduce the thickness, i added water. Coconut milk adds more sweetness and reduces the strong flavor of the sauce. Close the lid and cook for 10 minutes in medium low flame, stir in between. Serve with hot rice.

Now this sauce always ends up in the cart on our grocery store visits. xo, Hems

    1. thanks, and i don't think trader joe's sauce is available in India, but i bet you can find similar sauces in Indian super markets.
